History of Dan Dan Noodle

Dan dan noodles started out as a street food in Sichuan. In its earliest form, it was carried by hawkers on a bamboo pole (dan 扁担), from which the name of the dish is derived. The pole was attached to two baskets, one holding the ingredients, the other holding the cookware.

This flavorful noodle dish has evolved from humble street fare to a culinary sensation, with each bowl carrying the rich heritage of its vibrant beginnings.

Which part of China is Dan Dan Noodle from?

It is from Sichuan Province, located in southwestern China. Sichuan's capital city is Chengdu and as of 2007, the province had a population of 87,250,000 people. The province's climate is brutally humid, damp, and steamy in the summer and damp and chilly in the winter. Sichuan's weather is a popular folk explanation for the local taste for chilies.

Mystery of Sichuan Pepercorn

Even though it's called a pepper, Sichuan pepper (a berry of the prickly ash tree) has lemony notes and creates a tingly numbness in the mouth. They produce a strange, tingling, buzzing, numbing sensation that is something like the effect of carbonated drinks or of a mild electrical current (touching the terminals of a nine-volt battery to the tongue). Sanshools appear to act on several different kinds of nerve endings at once, induce sensitivity to touch and cold in nerves that are ordinarily nonsensitive, and so perhaps cause a kind of general neurological confusion,

About United Dumplings

Growing up in Northern China, dumplings have always been the most special food for our family reunion. Apart from being tasty, what really makes them special is that their preparation involves all the family and the harmony and joy created among our family members: grandma makes the filling, uncle makes the dough, auntie makes the wrapper, mom makes the perfect dumplings, dad makes the most ugly ones and children simply get messy with flour in laughters. Now having children of our own, we started United Dumplings, hoping to pass along our fond childhood memories of happy family reunions to our children through our interpretation of dumplings. During the process of creating our menu, we kept grandma’s handed-down recipes but also incorporated the flavors we brought along with our life adventures. We hope you will enjoy them!

Sincerely,

Sandy and Julia (Maverick, Bruce, Iris, Ivy and Irina)
